Prepare Rice and Beans
In a pot, combine rice, black beans, and enough water to cover. Add salt, and bring to a boil. Lower heat, cover, and simmer for about 20 minutes or until rice is fully cooked.

Fry Sweet Plantains
Peel the sweet plantains and slice them diagonally. Heat olive oil in a frying pan over medium heat. Fry the slices until golden brown on both sides, then remove and set aside.

Make Empanadas
Preheat oven as per empanada dough instructions. Roll out the dough and cut into circles. Fill each circle with cheese, fold, and seal the edges. Bake according to the package instructions until golden.

On a plate, serve the rice and beans, topped with the sautéed vegetables, beef, fried plantains, and an empanada on the side. Garnish with fresh lettuce, pico de gallo, and sliced avocado.
