Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, seasoning with salt and pepper. Sauté until the vegetables are soft and slightly caramelized, about 5-7 minutes. Remove from skillet and set aside.

Cook the Beef
In the same skillet, add the thinly sliced beef. Season with additional salt and pepper. Cook for about 5-7 minutes, or until the beef is browned and cooked through.

Combine Ingredients
Return the sautéed vegetables to the skillet with the cooked beef. Mix well to combine and heat through.

Melt the Cheese
Reduce the heat to low and layer the provolone and pepper jack cheese over the beef and vegetable mixture. Cover the skillet and let it cook for a few minutes until the cheese is melted.

Divide the beef and cheese mixture among the sub rolls. Serve immediately.
