Form the Patties
In a mixing bowl, season the grass-fed ground beef with salt and pepper. Divide the meat into two equal portions and form into patties.

Cook the Patties
In the same skillet used for the bacon, cook the patties over medium-high heat for about 4-5 minutes on each side or until they reach desired doneness.

Add Cheese
In the last minute of cooking, place a slice of pepper jack cheese on each patty and cover the skillet to melt the cheese.

Toast the Buns
While the cheese is melting, toast the burger buns in a separate pan until golden brown.

Assemble the Burger
On the bottom half of each bun, layer lettuce, the cooked patty with melted cheese, crispy bacon, sliced tomatoes, onions, and pickles. Add ketchup, mayonnaise, and mustard to taste, then cover with the top half of the bun.

Serve immediately with your favorite sides.
