Prepare the Beef
Season the beef roast with salt and black pepper. In a large skillet, sear the roast on all sides over medium-high heat until browned. Transfer to a slow cooker.

Make the Au Jus
In the same skillet, sauté the sliced onion and minced garlic until translucent. Add the beef broth, soy sauce, and Worcestershire sauce. Bring to a boil, then pour over the roast in the slow cooker.

Cook the Beef
Cover and cook on low for 6-8 hours or until the beef is tender and easily shredded.

Assemble the Sandwiches
Remove the beef from the slow cooker, shred it with two forks, and return it to the juices. To serve, slice the French rolls and fill them with shredded beef, top each with a slice of provolone and pepper jack cheese, and drizzle with some of the au jus.

Serve the sandwiches with small bowls of the au jus for dipping.
