Preparing the Salad Base

Wash Greens
Rinse the mixed greens and baby spinach under cold water to remove any dirt or impurities. Shake off excess water or use a salad spinner to dry.

Tear Greens
Tear the mixed greens and baby spinach into bite-sized pieces and place them in a large salad bowl.
Preparing the Vegetable Medley

Prepare Cherry Tomatoes
Cut the cherry tomatoes in half and add them to the bowl with the greens.

Slice Cucumber
Peel the cucumber if desired, then slice it into thin rounds or half-moons. Add to the salad bowl.

Chop Bell Pepper
Remove the seeds and stem from the bell pepper. Chop it into small pieces and add to the salad.

Thinly slice the red onion and add to the salad for a crunchy texture.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
