Method

Preparation

  1. 1

    Wash the Salal Berries

Start by rinsing the salal berries under cold running water to remove any dirt or debris.

  2. 2

    Prepare the Cooking Liquid

In a large pot, combine the washed salal berries and 4 cups of water. Bring to a boil over medium heat.

Cooking

  1. 3

    Simmer the Berries

Once the water is boiling, reduce the heat to low and let the berries simmer for about 30 minutes, stirring occasionally. This will help extract the flavor and color from the berries.

  2. 4

    Strain the Mixture

After simmering, remove the pot from heat and let it cool slightly. Use a fine mesh strainer to strain the mixture into another pot, separating the liquid from the berry pulp.

Finishing Touches

  1. 5

    Add Sweetener and Flavor

While the liquid is still warm, stir in 1 cup of honey, 2 tablespoons of fresh lemon juice, and 1 teaspoon of cinnamon powder until well combined.

  2. 6

    Cool and Serve

Let the mixture cool completely before transferring it to jars or bottles. Salal alum can be served chilled or at room temperature as a refreshing beverage.
