    Wash the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Marinate the Chicken

    In a bowl, combine the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, coriander powder, salt, and half of the chopped coriander and mint. Mix well and let it marinate for at least 1 hour, preferably overnight.

    Cook the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and sauté until they turn golden brown.

    Add Chicken

    Add the marinated chicken to the pot with the onions. Cook for about 10-15 minutes, stirring occasionally, until the chicken is browned and cooked through.

    Add Tomatoes and Spices

    Stir in the chopped tomatoes, green chilies, cumin seeds, garam masala, and remaining salt. Cook until the tomatoes soften and the oil separates from the mixture.

    Cook Rice

    In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice along with a pinch of salt. Cook until the rice is 70% done, then drain and set aside.

    Combine and Cook

    Layer the partially cooked rice over the chicken mixture in the large pot. Sprinkle the remaining chopped coriander and mint on top. Cover the pot with a lid and cook on low heat for 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.

    Once cooked, gently fluff the rice with a fork and serve hot with raita or salad on the side.
