Prepare the Vegetables
In a large paella pan or skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.

Add Squash and Mushrooms
Stir in the diced butternut squash and sliced mushrooms, cooking for an additional 5-7 minutes until they start to soften.

Incorporate Rice and Spices
Add the saffron bomba rice, smoked paprika, salt, and black pepper. Stir to combine all ingredients well.

Add Corn and Broth
Pour in the vegetable broth and add the corn. Bring the mixture to a boil, then reduce heat to a simmer.

Cook the Paella
Cover the pan and let it cook for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

Garnish and Serve
Once cooked, remove from heat, fluff the rice with a fork, and let it sit for a few minutes. Garnish with fresh parsley and serve hot.
