Braised Bison Short Ribs
1. Preheat your oven to 300°F (150°C).

4. Stir in the ancho chili powder, cumin, and cook for another minute until fragrant.

6. Cover the pot and transfer it to the preheated oven. Braise for about 3 hours, or until the meat is tender and falling off the bone.

Prepare Polenta
7. In the last 30 minutes of cooking the ribs, prepare the polenta. In a pot, bring 4 cups of water to a boil. Gradually whisk in the purple corn polenta and reduce heat to low. Cook for about 20 minutes, stirring frequently until thickened.

8. Stir in the grated cheese until melted and creamy. Season with salt and pepper to taste.

9. To serve, place a generous scoop of polenta on a plate, top with the braised bison short ribs, and drizzle with natural jus. Garnish with fried hominy.
