Plantain Chips

Pico de Gallo

Toppings

Method

Plantain Chips

  1. 1

    Prepare the Plantains

Peel the green plantains and slice them thinly (about 1/8 inch thick).

  2. 2

    Fry the Chips

Heat the vegetable oil in a large frying pan over medium heat. Once hot, fry the plantain slices in batches until golden and crispy, about 3-4 minutes per batch.

  3. 3

    Season

Remove the chips and place them on paper towels to drain. Season with salt to taste.

Beef Picadillo

  1. 4

    Cook the Onions and Peppers

In a large skillet, heat some oil over medium heat. Add the chopped onion and green bell pepper, sautéing until softened, about 5 minutes.

  2. 5

    Add the Beef

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.

  3. 6

    Add Remaining Ingredients

Stir in garlic, diced tomato, olives, cumin, salt, pepper, and bay leaf. Cook for another 10-15 minutes until the mixture is well combined and heated through.

Guacamole

  1. 7

    Mash the Avocados

In a bowl, mash the ripe avocados with a fork.

  2. 8

    Mix Ingredients

Add lime juice, salt, minced garlic, diced tomato, and chopped cilantro. Mix well to combine.

Pico de Gallo

  1. 9

    Combine Ingredients

In a bowl, combine diced tomatoes, chopped onion, cilantro, lime juice, and salt. Mix well.
