Prepare the Plantains
Peel the ripe plantains and slice them diagonally into about 1-inch thick pieces.

Fry the Plantains
In a large skillet, heat the vegetable oil over medium heat. Once the oil is hot, add the sliced plantains in batches, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until they are golden brown and caramelized. Remove from the skillet and place them on a paper towel to drain excess oil.

Prepare the Chili-Agave Sauce
In a small bowl, mix the chili powder, agave syrup, and a pinch of salt together until combined.

Assemble the Dish
On a serving platter, arrange the fried plantains. Drizzle with crema and the chili-agave sauce. Sprinkle crumbled queso cotija on top.

Serve warm as a side dish or appetizer.
