    Prepare the Ingredients

    Dice the flank steak, poblano pepper, and onion into small pieces. Chop the bacon into small bits. Chop the cilantro and set aside.

    Cook the Bacon

    In a large skillet, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving the grease in the skillet.

    Sauté the Vegetables

    In the same skillet, add the diced onion and poblano pepper. Sauté until they are softened, about 5 minutes.

    Cook the Steak

    Add the diced flank steak to the skillet with the vegetables. Season with salt and pepper to taste. Cook until the steak is browned and cooked to your desired doneness, about 5-7 minutes.

    Combine Ingredients

    Add the cooked bacon back to the skillet with the steak and vegetables. Mix well and sprinkle the queso on top. Cover the skillet for a couple of minutes until the cheese melts.

    Warm the Tortillas

    In a separate pan, warm the corn tortillas over medium heat until pliable.

    Assemble the Tacos

    To assemble the tacos, place a generous portion of the steak mixture onto each tortilla. Top with chopped cilantro and a squeeze of lime juice. Serve immediately.
