Preparation and Cooking
- 1
Marinate the Chicken
In a bowl, mix the olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lime juice. Rub this mixture all over the halved chicken. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.

- 3
Roast the Chicken
Preheat your oven to 425°F (220°C). Place the marinated chicken halves on a roasting pan, skin side up. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- 4
Warm the Tortillas
While the chicken is roasting, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- 5
Serve
Once the chicken is done, let it rest for a few minutes before carving. Serve with the tomatillo salsa and warm tortillas.
