Marinate the Beef
In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Slice the ribeye steak into thin strips and add to the marinade. Let it marinate for at least 30 minutes, preferably 2 hours in the refrigerator.

Cook the Beef
Heat a skillet over medium-high heat. Add the marinated beef and cook for about 5-7 minutes, or until the beef is cooked through and slightly caramelized. Remove from heat.

Prepare the Gochujang Mayo
In a small bowl, mix the mayonnaise and gochujang until well combined. Adjust the spiciness by adding more gochujang if desired.

Assemble Tacos
In each taco shell, place a few pieces of cooked beef, top with jalapeno slices, lettuce leaves, pickled onions, and a drizzle of gochujang mayo.
