Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until it shimmers.

Fry the Plantains
Carefully add the plantain slices to the hot oil, frying them in batches until golden brown and caramelized, about 2-3 minutes per side. Remove and drain on paper towels.

Make the Chili-Agave Sauce
In a small bowl, mix together the chili powder and agave syrup until well combined.

Arrange the fried plantains on a serving plate. Drizzle with the chili-agave sauce, add a dollop of crema, and sprinkle with crumbled queso cotija.
