    Cook the Chorizo

    In a skillet over medium heat, add the chorizo and cook until browned and cooked through. Remove from heat and drain excess fat.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent.

    Make the Base

    In a large bowl, combine the cooked chorizo, sautéed onion and garlic, flour, milk, salt, and pepper. Mix well until smooth.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 1 hour to firm up.

    Form the Croquetas

    Once chilled, scoop out portions of the mixture and roll them into small balls or oval shapes.

    Prepare for Frying

    Set up a breading station with one bowl of beaten eggs and another bowl of breadcrumbs. Dip each croqueta in the egg, then coat with breadcrumbs.

    Fry the Croquetas

    In a deep pan, heat olive oil over medium-high heat. Fry the croquetas in batches until golden brown on all sides. Drain on paper towels.

    Serve

    Serve the croquetas warm, accompanied by morita mayo and chimichurri.
