Prepare the Peppers
Wash the sweet mini peppers and pat them dry with a paper towel.

Blister the Peppers
In a large skillet, heat the olive oil over medium-high heat. Add the sweet peppers and cook for about 5-7 minutes, until they are blistered and slightly charred, stirring occasionally.

Season the Peppers
Once the peppers are blistered, remove them from heat. Season with salt and sprinkle Tajín seasoning over the top.

Serve
Transfer the blistered peppers to a serving dish. Drizzle with Mexican crema and sprinkle with cotija cheese. Serve warm.
