    Prepare the Ancho Rub

    In a small bowl, combine the ancho chili powder, garlic powder, cumin, salt, and black pepper. Mix well.

    Season the Steak

    Rub the NY strip steaks with olive oil and then generously apply the ancho rub to both sides of each steak. Let them sit at room temperature for 30 minutes.

    Cook the Potatoes

    Boil the potatoes in salted water until tender, then drain and mash. Season with salt and pepper to taste.

    Sear the Steak

    Preheat a grill or skillet over medium-high heat. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

    Prepare the Watercress

    Rinse the watercress under cold water and pat dry. Set aside.

    Plating

    On a plate, place a scoop of the mashed potatoes, lay the sliced steak beside it, and garnish with fresh watercress.
