Prepare the Vegetables
Preheat your oven to 400°F (200°C). Cut the cauliflower into florets, peel and dice the butternut squash, and clean the maitake mushrooms.

Roast the Vegetables
Toss the cauliflower, butternut squash, and maitake mushrooms with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and slightly charred.

Prepare the Scallops
Pat the scallops dry with paper towels and season with salt and black pepper on both sides.

Sear the Scallops
In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat. Once the oil is hot, add the scallops and sear for about 2-3 minutes on each side until they are golden brown and cooked through.

Finish the Dish
Once cooked, remove the scallops from the skillet and serve them on a plate with the roasted vegetables. Drizzle with lemon juice and garnish with chopped fresh parsley.
