In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

Combine Wet Ingredients

In another bowl, whisk together the milk, olive oil, vanilla extract, and egg until smooth.

Mix Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Pan

Heat a non-stick skillet or griddle over medium heat and lightly grease with olive oil or cooking spray.

Cook the Pancakes

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
