1. Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves from the cauliflower and cut it into florets. Toss the florets in olive oil, salt, and black pepper.
2. Roast the Cauliflower
Spread the cauliflower florets on a baking sheet and roast them for about 25-30 minutes, or until they are golden brown and tender, turning halfway through.
3. Crispy Garbanzo Beans
Drain and rinse the garbanzo beans. Pat them dry with a paper towel. On a separate baking sheet, toss the garbanzo beans with olive oil and za'atar seasoning. Roast them in the oven for about 20 minutes until crispy.
4. Make the Gremolata
Finely chop the parsley and garlic. In a bowl, mix the chopped parsley, garlic, and the zest of the lemon. Squeeze in the lemon juice and stir until combined.
5. Combine and Serve
Once the cauliflower is roasted and the garbanzo beans are crispy, combine them on a serving platter. Drizzle with gremolata and serve immediately.
