    Prepare the Octopus

    In a large pot of boiling salted water, cook the octopus for about 45 minutes or until tender. Remove from the pot and let it cool. Once cooled, cut the octopus into manageable pieces.

    Cook the Potatoes

    In the same pot, boil the baby potatoes until fork-tender (about 15-20 minutes). Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat 50 ml of olive oil over medium heat. Add the chopped onion, minced garlic, and sliced bell peppers. Cook until the vegetables are soft (about 5-7 minutes).

    Grill the Octopus

    Preheat a grill or grill pan over medium-high heat. Brush the octopus pieces with the remaining olive oil and season with salt and black pepper. Grill for about 3-4 minutes on each side until charred and heated through.

    Combine and Serve

    In a large serving dish, combine the grilled octopus, sautéed vegetables, and boiled potatoes. Drizzle with extra olive oil and garnish with chopped fresh parsley. Serve warm.
