Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
Add Garlic and Spices
Stir in the minced garlic and red chili flakes, cooking for an additional 2 minutes until fragrant.
Incorporate Tomato Sauce
Pour in the tomato sauce and stir well to combine. Season with salt and black pepper to taste.
Simmer the Sauce
Bring the sauce to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld.
Add Sardines
Gently add the canned sardines (drained) to the sauce, being careful not to break them. Simmer for another 5 minutes.
Garnish and Serve
Remove from heat, sprinkle with fresh parsley, and serve hot. Enjoy as is or with crusty bread.
