Cooking Instructions
- 1
Sauté the Base
In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced chicken and chorizo, cooking until browned. Add the onion, garlic, and green bell pepper, and sauté until soft.
- 2
Add Tomatoes and Spices
Stir in the diced tomatoes, saffron, paprika, salt, and black pepper. Cook for about 5 minutes until the tomatoes soften.
- 3
Add Rice and Broth
Add the Bomba rice, stirring to coat in the mixture. Pour in the chicken broth and bring to a boil.
- 4
Simmer
Reduce heat to low and simmer uncovered for 20 minutes. Do not stir the rice.
- 5
Add Seafood
After 20 minutes, gently nestle the seafood mix into the rice. Cover and cook for an additional 10 minutes, or until the seafood is cooked through and the rice is tender.
- 6
Rest and Serve
Remove from heat and let the paella rest for 5 minutes. Serve with lemon wedges on the side.
