Prepare the Steak
Season the beef skirt steak with salt and black pepper on both sides. Let it sit at room temperature for about 15 minutes.

Cook the Steak
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned skirt steak and cook for about 3-4 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove the steak from the skillet and let it rest for 5 minutes.

Sauté the Mushrooms
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the sliced mushrooms and cook, stirring occasionally, for about 5-7 minutes until they are tender and lightly browned.

Combine and Serve
Slice the rested skirt steak against the grain into thin strips. Return the steak to the skillet with the sautéed mushrooms, tossing to combine. Garnish with chopped fresh parsley and serve immediately.
