Prepare the Filling
In a large mixing bowl, combine the shredded chicken, black beans, corn, cream cheese, shredded cheddar cheese, chili powder, cumin, salt, and pepper. Mix until well blended.

Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface, with a corner pointing towards you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.

Fry the Egg Rolls
Heat oil in a deep frying pan over medium heat. Carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve with Dip
Serve the southwest egg rolls hot with ranch dressing for dipping.
