Prepare the Chicken
In a bowl, combine flour, cornstarch, salt, black pepper, and baking powder. In another bowl, whisk together buttermilk and egg. Dip each chicken breast in the buttermilk mixture, then coat in the flour mixture. Heat vegetable oil in a deep skillet over medium-high heat and fry the chicken until golden brown and cooked through (about 6-8 minutes per side). Remove and let drain on paper towels.

Make the Waffles
Prepare the Belgian waffle mix according to package instructions, using water. Preheat the waffle iron and pour the batter into it, cooking until golden brown and crispy.

Serve
Place the fried chicken on top of the waffles. Drizzle with maple syrup and dust with powdered sugar before serving.
