    Caramelize the Onions

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until caramelized (about 15-20 minutes). Season with salt and black pepper. Remove from the skillet and set aside.

    Cook the Peppers

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and sauté until tender (about 5-7 minutes). Season with salt and black pepper. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the shaved steak. Season with salt and black pepper, and cook until browned and cooked through (about 5-7 minutes).

    Assemble the Sandwiches

    Preheat the oven to 350°F (175°C). Slice the hoagie rolls and layer the cooked steak, caramelized onions, sautéed peppers, provolone cheese, and gorgonzola cheese inside each roll. Place the sandwiches on a baking sheet.

    Melt the Cheese

    Bake the sandwiches in the preheated oven until the cheese is melted and bubbly (about 5-10 minutes).
