    Prepare the Vegetables

    Wash and chop all the vegetables: onion, garlic, red bell pepper, yellow squash, zucchini, and mushrooms, and set them aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 2-3 minutes until the onion is translucent.

    Add Remaining Vegetables

    Add the red bell pepper, yellow squash, zucchini, and mushrooms to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.

    Prepare the Sauce

    Stir in the crushed tomatoes and tomato paste. Add the dried Italian herbs, salt, and black pepper. Mix well and reduce the heat to low.

    Simmer

    Let the sauce simmer for about 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.

    Finish with Cheese

    Once the sauce is ready, stir in the grated Parmesan cheese until melted and well combined.
