Preparation
Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
Chop the Vegetables
While the pasta is cooking, chop the onion, garlic, red bell pepper, yellow squash, zucchini, and mushrooms into bite-sized pieces.
Cooking
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until translucent, about 2-3 minutes. Then add the red bell pepper, yellow squash, zucchini, and mushrooms. Cook for an additional 5-7 minutes until vegetables are tender.
Prepare the Sauce
Stir in the crushed tomatoes, heavy cream, Italian seasoning, salt, and black pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.
Combine Pasta and Sauce
Add the cooked pasta to the skillet with the sauce and vegetables. Toss everything together until the pasta is well coated with the sauce. Cook for an additional 2-3 minutes to heat through.
Serving
Plate the Dish
Serve the Pasta Primavera Mare in bowls, garnishing with extra black pepper or fresh herbs if desired.
