Gorgonzola Shrimp Scampi Recipe

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside.

Preparing the Sauce

    Sauté the Garlic

    In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Cook the Shrimp

    Add the peeled and deveined shrimp to the skillet. Season with salt and black pepper. Cook for about 3-4 minutes or until the shrimp turn pink and are cooked through.

    Make the Cheese Sauce

    Reduce the heat to low. Stir in the gorgonzola cheese and grated parmesan cheese. Add the lemon juice and stir until the cheeses are melted and the sauce is creamy. If the sauce is too thick, you can add a splash of pasta water to reach desired consistency.

Combining and Serving

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet with the shrimp and cheese sauce. Toss everything together until the pasta is well coated with the sauce.

    Serve the Gorgonzola shrimp scampi hot, garnished with chopped fresh parsley and lemon wedges on the side.
