    Mashing

    Prepare the mash with the grains.

    Heat 6 gallons of water to 165°F (74°C).

    Add the Pale Malt, Crystal Malt, and Carapils Malt to the water and stir to combine.

    Maintain a temperature of 152°F (67°C) for 60 minutes.

    Sparging

    Rinse the grains.

    After mashing, sparge the grains with hot water (170°F/77°C) until you collect about 6 gallons of wort.

    Boiling

    Boil the wort and add hops.

    Bring the wort to a rolling boil.

    Add Centennial Hops and boil for 60 minutes.

    Add Cascade Hops with 15 minutes remaining in the boil.

    Add Simcoe Hops and Spruce Tips at flameout.

    Cooling

    Cool the wort.

    Cool the wort quickly to 70°F (21°C) using a wort chiller or an ice bath.

    Fermentation

    Ferment the wort.

    Transfer the cooled wort to a sanitized fermentation vessel.

    Pitch the yeast into the wort and seal the fermenter.

    Let the beer ferment for about 1-2 weeks at 68°F (20°C).

    Bottle the beer.

    After fermentation is complete, dissolve the priming sugar in 2 cups of boiling water.
