Method

Rib Preparation

    Season the Ribs

    Generously rub the baby back pork ribs with salt, black pepper, garlic powder, and onion powder on all sides.

    Smoke the Ribs

    Preheat your smoker to 225°F (107°C). Place the seasoned ribs on the smoker. Smoke for approximately 3 hours or until the ribs are tender.

BBQ Sauce Preparation

    Combine Ingredients

    In a medium saucepan, combine the Smoked Porter beer, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, mustard powder, salt, and black pepper.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat, stirring frequently. Allow it to simmer for about 15-20 minutes until it thickens slightly.

Grilling and Serving

    Grill the Ribs

    After smoking, preheat your grill to medium-high heat. Grill the smoked ribs for about 10-15 minutes, turning occasionally and basting with the BBQ sauce.

    Serve

    Once the ribs are nicely caramelized and heated through, remove from the grill. Slice between the bones and serve with extra BBQ sauce on the side.
