    Prepare the Halibut

    Rinse the wild caught Alaskan halibut under cold water and pat dry with paper towels.

    Marinate the Halibut

    In a small bowl, mix together olive oil, lemon juice, smoked paprika, garlic powder, salt, and black pepper. Brush this mixture evenly over the halibut to marinate for at least 30 minutes.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. This will help create smoke when cooking. Drain the chips and place them in the smoker.

    Smoke the Halibut

    Preheat your smoker to 225°F (107°C). Once heated, place the marinated halibut on the smoker rack. Close the lid and smoke for about 30-40 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

    Serve

    Remove the halibut from the smoker and let it rest for a few minutes. Serve warm with additional lemon wedges if desired.
