Pretzel Dough Preparation

    Activate the Yeast

    In a small bowl, dissolve the active dry yeast and brown sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Once the yeast mixture is frothy, add it to the flour mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzel Sticks

    After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 12 inches long) and cut them into 1-inch wide sticks.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Preheat your oven to 425°F (220°C).

    Boil the Pretzel Sticks

    Carefully drop the pretzel sticks into the boiling water, 2-3 at a time, and let them boil for about 30 seconds. Remove with a slotted spoon and place them on a parchment-lined baking sheet.

    Sprinkle the boiled pretzel sticks with coarse sea salt before baking.

    Bake in the preheated oven for about 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

Spicy Mango Chipotle Beer Cheese Preparation

    Combine Ingredients

    In a medium saucepan over low heat, combine the shredded cheddar cheese, softened cream cheese, beer, mango puree, minced chipotle peppers, garlic powder, onion powder, and black pepper.

    Melt and Stir

    Stir continuously until the cheese has melted and the mixture is smooth and creamy. Adjust the seasoning with additional black pepper if desired.

    Serve

    Serve the warm beer cheese alongside the soft baked pretzel sticks.
