    Prepare the Smoked Garlic Confit

    In a small saucepan, combine the smoked garlic cloves and olive oil. Heat over low heat until the garlic is soft and fragrant, about 15-20 minutes. Remove from heat and let cool. Once cooled, mash the garlic into a paste.

Cheese Mixture

    Prepare the Cheese Filling

    In a bowl, mix the creamy brie and smoked gouda cheeses until well combined. Add the mashed smoked garlic confit to the cheese mixture, and season with salt and black pepper. Stir until fully incorporated.

Assembling the Toasties

    Assemble the Toasties

    Lay out the slices of sourdough bread on a clean surface. Spread the cheese mixture generously on two slices of bread. Place the other two slices on top to form sandwiches.

    Toast the Sandwiches

    In a skillet over medium heat, sprinkle half of the parmesan cheese on the bottom. Place one sandwich in the skillet and sprinkle the remaining parmesan on top. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
