AKB Smoked Porter Sauce
Method
Preparing the Wings

Marinate the Wings
In a large bowl, combine chicken wings, jerk seasoning, and olive oil. Mix well to ensure the wings are evenly coated with seasoning. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Smoker
Preheat your smoker to 250°F (121°C) using your preferred wood chips for flavor, such as hickory or applewood.

Smoke the Wings
Once preheated, place the marinated wings in the smoker. Smoke the wings for about 1.5 hours or until they reach an internal temperature of 165°F (74°C).

Melt the Butter
In a saucepan over medium heat, melt the unsalted butter.

Combine Ingredients for Sauce
Pour in the AKB Smoked Porter beer, brown sugar, hot sauce, soy sauce, black pepper, and salt. Stir well to combine all ingredients.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 10 minutes, allowing it to thicken slightly.
Tossing and Serving

Toss Wings in Sauce
Once the wings are smoked and the sauce is ready, remove the wings from the smoker and place them in a large bowl. Pour the smoked porter sauce over the wings and toss to coat evenly.

Serve
Plate the wings and serve immediately, garnished with green onions or fresh herbs if desired.
