Preparation

    Gather Ingredients

    Start by gathering all the ingredients listed above.

Mashing

    Heat Water

    In a large brew kettle, heat 5 gallons of filtered water to about 165°F (74°C).

    Add Malts

    Add the pale malt, crystal malt, and carapils malt to the kettle.

    Mash

    Hold the temperature between 150°F to 155°F (65°C to 68°C) for 60 minutes.

    Sparge

    After mashing, raise the temperature to 170°F (77°C) and hold for 10 minutes to sparge.

Boiling

    Boil Wort

    Bring the wort to a boil.

    Add Hops

    Once boiling, add the Centennial hops and boil for 60 minutes.

    Add Simcoe Hops

    At 15 minutes remaining, add the Simcoe hops.

    At the end of the boil, add the Cascade hops and turn off the heat.

Cooling and Fermentation

    Cool the wort quickly using a wort chiller or ice bath to about 70°F (21°C).

    Transfer the cooled wort to a sanitized fermentation vessel.

    Pitch the American Ale yeast into the wort.

Bottling
