Prepare the Halibut
Cut the halibut fillets into bite-sized pieces (about 1-2 inches). Pat them dry with paper towels to remove excess moisture.

Make the Batter
In a mixing bowl, combine the gluten-free flour, salt, and black pepper. Gradually whisk in the Lemon-Lime Spruce Tip Hard Seltzer until the batter is smooth and well combined.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Halibut
Dredge each piece of halibut in the batter, allowing excess to drip off. Carefully place the battered halibut into the hot oil, frying in batches to avoid overcrowding the pan. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, fresh dill, salt, and black pepper. Mix until well combined. Adjust seasoning to taste and cover until ready to serve.
