Brewing Process

    Mashing

    Start by heating 3 gallons of water to 165°F (74°C). Add the Pale Malt and Crystal Malt to the water and stir well. Maintain the temperature between 150°F (65°C) and 155°F (68°C) for 60 minutes.

    Lautering

    After mashing, drain the wort into a brew kettle. Rinse the grains with an additional 1 gallon of water at 170°F (77°C) to extract more sugars.

    Boiling

    Bring the wort to a boil. Once boiling, add the Simcoe, Citra, and Mosaic hops. Boil for 60 minutes, adding Amarillo hops with 15 minutes left and East Kent Goldings hops with 5 minutes left.

    Cooling the Wort

    After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and ferment at 68°F (20°C) for 1-2 weeks.

    Bottling

    Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer and cap. Let it carbonate at room temperature for 1-2 weeks.
