Preparation and Cooking

    Prepare the Halibut

    Pat the halibut fillets dry with a paper towel. Drizzle olive oil over both sides of the fillets.

    Season the Halibut

    Sprinkle salt and black pepper evenly over both sides of the halibut fillets.

    Preheat the Grill

    Preheat your grill to medium-high heat, approximately 375°F (190°C).

    Grill the Halibut

    Place the halibut fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

    Prepare the Vegetables

    While the halibut is grilling, wash and dry the lettuce leaves. Slice the tomato into thick rounds and thinly slice the red onion.

    Toast the Pretzel Buns

    If desired, lightly toast the pretzel buns on the grill for about 1-2 minutes until warm and slightly crispy.

    Assemble the Sandwich

    On the bottom half of each pretzel bun, layer the lettuce, grilled halibut, tomato slices, and red onion. Top with a generous spoonful of house tartar sauce and close with the top half of the bun.
