Pat the halibut fillets dry with paper towels. In a small bowl, mix salt, pepper, and paprika. Brush the fillets with olive oil on all sides, then rub with the salt-pepper-paprika mixture to season evenly.

Preheat and heat pan
Heat a heavy skillet (cast iron preferred) over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer.

Place the seasoned halibut fillets in the hot skillet. Sear for 2-3 minutes on the first side until a golden crust forms. Flip and cook another 2-3 minutes until the fish is just opaque and flakes easily.

Add the minced garlic to the pan and cook about 30 seconds until fragrant. Pour in white wine (or broth) and simmer for 1-2 minutes to reduce slightly.
