Make the filling
In a medium bowl, beat the cream cheese until smooth. Fold in the Dungeness crab meat, green onions, lemon juice, mayonnaise, garlic powder, Old Bay, salt, and pepper. Mix until just combined and evenly distributed.

Prep wrappers and portion filling
Set out wonton wrappers. Place about 1 teaspoon of filling in the center of each wrapper. Keep portions consistent for even sealing.

Seal the wontons
Dip your finger in water and brush the edges of the wrapper. Fold the wrapper over the filling and seal by pinching edges, forming triangles or squares. Press firmly to seal; remove air pockets.

Heat the oil
Add oil to a deep pot or fryer and heat to 350°F (175°C). Use a thermometer to monitor the temperature; keep it steady for crisp frying.

Fry until golden
Carefully fry in batches, about 2–3 minutes per batch, until the wrappers are puffed and golden brown. Turn once for even color. Remove with a slotted spoon and drain on paper towels.

Serve
Serve hot with Sweet Thai Chili Sauce for dipping. Optional garnish: lime wedges or chopped cilantro.
