    Rinse the prawns, pat dry with paper towels, then season lightly with salt and a pinch of pepper.

    Dry mix

    In a large bowl, whisk together all-purpose flour, cornstarch, desiccated coconut, baking powder, salt, and pepper until evenly combined.

    Wet mix

    In a separate bowl, whisk eggs with coconut milk until smooth.

    Combine

    Pour the wet mix into the dry mix and whisk to form a thick batter.

    Coat prawns

    Dip each prawn into the batter, then coat with extra desiccated coconut if a thicker crust is desired. Shake off excess.

    Prepare potatoes

    Cut potatoes into thick fries. Rinse under cold water to remove excess starch, then pat completely dry.

    Season chips

    Toss potato fries with olive oil, paprika, and a pinch of salt (to taste).

    Bake fries

    Spread fries on a baking sheet in a single layer. Bake at 220C (425F) for 25-30 minutes, turning once halfway, until edges are crisp and centers are tender.

    In a small bowl, whisk together sweet chili sauce, mayonnaise, lime juice, and garlic powder. Taste and adjust salt if needed.

    Fry prawns

    Heat oil in a deep fryer or heavy pot to 360°F (180°C). Fry prawns in batches for 2-3 minutes until golden and crisp. Drain on paper towels.

    Serve coconut prawns with hot chips and dipping sauce. Garnish with chopped coriander if using.
