    Make lemon garlic butter

    Melt 1 tablespoon unsalted butter in a small saucepan over medium heat. Add 2 minced garlic cloves and sauté 1–2 minutes until fragrant. Stir in 1 tablespoon lemon juice and 1 teaspoon lemon zest. Remove from heat and keep warm.

    Prepare seafood and rice

    Pat salmon fillets dry; season with salt and pepper. Brush lightly with 1 teaspoon olive oil. Reheat 2 cups cooked jasmine rice; keep warm.

Cooking

    Sear salmon

    Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear salmon fillets 4–5 minutes per side or until cooked to your preference. Brush with a portion of the lemon butter in the last minute of cooking.

    Cook shrimp

    Season 12 large shrimp with a pinch of salt and pepper. In a separate skillet, heat 1 teaspoon olive oil over medium-high. Sauté shrimp 2–3 minutes per side until pink and opaque. Add minced garlic and a squeeze of lemon juice in the last 30 seconds.

    Warm rice and grill vegetables

    Warm the 2 cups cooked jasmine rice in a microwave or on the stove. Fluff with a fork. Toss 1 cup mixed grilled vegetables with a little olive oil, salt, and pepper, then grill or sauté 3–4 minutes per side until tender and lightly charred.

Plating

    Plate and garnish

    Spoon rice onto plates. Top with salmon fillet and arrange shrimp alongside. Add grilled vegetables. Place 1 lemon wedge on each plate and sprinkle chopped parsley over the dish. Drizzle any remaining lemon butter over the fish and serve immediately.
