Quesadilla Preparation

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook until browned and fully cooked, breaking it apart with a spatula, approximately 5-7 minutes.

    Prepare Quesadillas

    Lay one tortilla on a flat surface. Evenly distribute a portion of cooked chorizo and sprinkle with shredded cheese. Top with another tortilla.

    Cook Quesadilla

    In the same skillet, add a little oil if necessary, and place the quesadilla. Cook for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.

    Slice Quesadilla

    Remove the quesadilla from the skillet, let it cool for a minute, then cut it into wedges.

Salsa Ranchera Preparation

    Mix Ingredients

    In a bowl, combine the chopped tomatoes, onion, jalapeño, cilantro, and lime juice. Add salt to taste.

    Chill Salsa

    Let the salsa sit for at least 10 minutes to allow the flavors to blend.

Serving

    Plate the Dish

    On a plate, serve the quesadilla wedges alongside the cooked rice, refried beans, shredded lettuce, and a generous dollop of sour cream.

    Add Salsa

    Top the quesadilla with the homemade salsa ranchera or serve it on the side for dipping.
