Prepare Salsa Ranchera

Adjust Seasoning
Taste the salsa and adjust seasoning if necessary. Set aside.
Cook Quesadilla

Heat Tortilla
In a large skillet over medium heat, place one flour tortilla in the skillet.

Add Cheese and Filling
Sprinkle 1/2 cup of shredded cheese on half of the tortilla. Add 1/2 cup of cooked carnitas on top of the cheese.

Fold and Cook
Fold the tortilla over to cover the filling. Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.

Repeat
Repeat the process with the remaining tortillas, cheese, and carnitas.
Serve

Plate Quesadilla
Cut the quesadillas into wedges and place them on a serving platter.

Add Sides
Serve with cooked rice, refried beans, shredded lettuce, and a dollop of sour cream.

Garnish with Salsa
Drizzle the homemade salsa ranchera over the quesadillas or serve on the side for dipping.
