Hummus

Prepare the Hummus
In a food processor, combine cooked chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, and salt. Blend until smooth.

Adjust Consistency
Add water gradually to achieve desired consistency, blending until creamy.
Baba Ganoush

Roast the Eggplant
Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and roast for 30-40 minutes until soft. Let it cool, then scoop out the flesh.

Blend Ingredients
In a food processor, combine roasted eggplant flesh, tahini, lemon juice, garlic, olive oil, salt, and smoked paprika. Blend until smooth.

Soak Chickpeas
Soak dried chickpeas in water overnight. Drain and rinse before using.

Prepare Falafel Mixture
In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, and salt. Blend until coarse but combined.

Form and Fry Falafels
Shape the mixture into small balls or patties. Heat oil in a frying pan over medium heat and fry the falafels until golden brown, about 3-4 minutes on each side.
