Preparing Lady Fingers

Soak Lady Fingers
In a shallow dish, combine the fresh-brewed espresso and sugar. Allow it to cool slightly. Dip each lady finger into the espresso mixture for about 1-2 seconds, ensuring they soak but don't become soggy. Arrange half of the soaked lady fingers in a single layer at the bottom of the tray.

Prepare Custard
In a mixing bowl, whisk the egg yolks and sugar until creamy and pale. Gradually add the mascarpone cheese and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.

Layer Ingredients
Spread half of the custard filling over the layer of soaked lady fingers. Repeat the process with the remaining lady fingers, soaking them in the espresso mixture, and then top with the rest of the custard filling. Smooth out the top with a spatula.

Chill the tiramisu in the refrigerator for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder, drizzle with chocolate sauce, and sprinkle with chocolate shavings if desired.
