Prepare the Cracked Wheat
In a medium bowl, combine 1 cup of cracked wheat with 1.5 cups of boiling water. Cover the bowl with a lid or plastic wrap and let it sit for about 20-30 minutes, or until the water is absorbed and the wheat is tender.

Chop the Vegetables
While the cracked wheat is soaking, finely chop the parsley and green onions. Dice the tomatoes and set aside.

Combine Ingredients
Once the cracked wheat has absorbed the water, fluff it with a fork. In a large mixing bowl, combine the fluffed cracked wheat, chopped parsley, green onions, and diced tomatoes.

Add Dressing
Drizzle the olive oil and lemon juice over the mixture. Season with salt to taste. Mix everything together gently until well combined.

Cover the tabouli and let it sit in the refrigerator for at least 30 minutes to allow flavors to meld. Serve chilled as a refreshing side dish.
